Idli sambar is a popular and most liked South Indian breakfast and is enjoyed by all the age groups.

In this, idlis are a type of delicious savoury rice cakes. These cakes are generally being made by steaming a batter consisting of fermented black lentils (de-husked) and rice. Benefit of fermentation is that it breaks down the starches to make more readily metabolized by the body.

Sambar is a soothing thick spicy South Indian Vegetarian Stew with an extract of Split Pigeon Peas (Toor / Tuvar) dal soured with tamarind, this is made in different variations and with selected add-on vegetables, these are generally soft vegetables like brinjal, drumstick, gourd and lady’s finger. Coupled with Idlis, this is a healthy breakfast and is often taken as complete meals.

In our recipe, for Idlis we have taken well-adjusted proportion of rice, black lentils and salt with subsequent well timed fermentation process. This fermented batter is than lightly steamed to offer a mild and a soothing taste.

For Sambar, we have selected finest of the Split Pigeon Peas (Tuvar) dal, balanced with selected vegetables this is cooked on light flame and is tempered by well-equalized vegetables and special spices. This lightly spiced Sambar is enjoyed with Idlis, and can prove to be effective source of protein and fibre.
